Allegiant Stadium is significantly enhancing its culinary offerings for the upcoming 2026 Las Vegas Raiders season, introducing an array of new concessions, specialty dishes, and premium dining options. This extensive menu expansion, spearheaded by Silver & Black Hospitality, reflects a commitment to elevating the fan experience, building on the stadium's recent accolades for its food and overall venue quality.

Allegiant Stadium's Gastronomic Transformation for the 2026 Season

In a delectable announcement on a recent Tuesday, Silver & Black Hospitality, the dedicated culinary and hospitality partner for Allegiant Stadium in the vibrant city of Las Vegas, unveiled an impressive array of new dining experiences for the 2026 Raiders season. This ambitious upgrade encompasses a wide variety of concession items, bespoke opponent-themed dishes, innovative cocktails, exquisite desserts, and luxurious premium selections.

Among the standout new concession items is the imaginative Fry Bread Pot Roast Taco, a fusion creation adorned with crisp lettuce, ripe tomatoes, creamy queso fresco, zesty salsa verde, and a hint of chipotle crema. For those craving a unique street food experience, the Street Dog Torta offers a Sabrett hot dog embraced by succulent pork belly, hearty refried beans, and a rich avocado aioli. The Chile Relleno Burger, crowned with fresh avocado and a generous dollop of crema, promises a delightful kick. Rounding out the diverse offerings are a sophisticated Focaccia and Lox Sandwich and the generously proportioned Really Big Chicken & Waffles, served with tangy pickles, sweet hot honey, and aromatic chives.

The culinary journey extends throughout the season with additional offerings such as Buffalo Chicken Wontons, flavorful Potato Tacos, an XL Chicken Club Sandwich, and a Korean Philly Cheesesteak, boasting thinly shaved beef, pungent kimchi, melted mozzarella and provolone, vibrant green onions, and a spicy gochujang aioli.

Highlighting the innovative spirit, Silver & Black Hospitality will also present limited-edition dishes crafted specifically for select Raiders matchups. The Chile Relleno Burger and an Elote Dog are slated to appear during the game against the Los Angeles Rams, while the distinctive Fry Bread Pot Roast Taco will make a special appearance when the Kansas City Chiefs visit. The Chargers game will feature the Street Dog Torta and the indulgent Cali Dog, loaded with crispy bacon, sautéed peppers and onions, fiery serrano peppers, and a classic trio of mustard, ketchup, and mayonnaise. For the highly anticipated home opener against the Miami Dolphins, fans can savor The Cuban, a colossal 10-inch hot dog topped with tender pork belly, tangy deli mustard, crunchy pickles, and a decadent cheese fondue. Even the game-day cocktails will embrace the spirit of the opponents with themed concoctions.

The stadium's premium areas will reflect the opulent essence of Las Vegas with an assortment of high-end culinary delights. Executive Chef Dillon Schoell proudly showcased the A5 Wagyu tomahawks and an exquisite new Caviar Ice Service, featuring the luxurious Tsar Nicoulai Golden Osetra caviar, accompanied by delicate blini, rich crème fraîche, and traditional accoutrements. This lavish caviar service will be available as an upgrade to the Steakhouse Package and as an à la carte option with tomahawk steak orders. Premium guests can also indulge in a chilled Tierra Y Mar Board, presenting guajillo-crusted beef tenderloin and refreshing molcajete shrimp ceviche. The Las Vegas Flatbread, with its blend of lemon ricotta, succulent lobster, black truffle tenderloin, and creamy horseradish, offers a taste of local luxury, alongside the unique Japanese milk bread lobster rolls.

The dessert menu is equally enticing, featuring a rich Stadium Cake comprising chocolate cake, cookies-and-cream mousse, luscious chocolate ganache, and smooth chocolate buttercream. Other sweet additions include a Dubai Cookie Cone, Blood Orange Panna Cotta, a Red Velvet Crepe Sachet, Brown Sugar S'mores Macaron, Pistachio Baklava Crème Cup, Hazelnut Cappuccino Stone, and a customizable build-your-own crepe bar.

New beverage options include the Bandero Tequila Spicy Margarita, Lady Luck Margarita, Strawberry Mint Mule, Endzone Mojito, Raiders Rosé, and a refreshing nonalcoholic mocktail. Bandero Tequila joins a growing list of vendors this season, alongside Taco Bell, BLVD BBQ, and Hibachi Done Wright. Returning favorites like Las Vegas's own Hawaiian restaurant Antidote, Pinkbox Doughnuts, Fuku Chicken, Pizza Rock and Slice House, Tu Michoacana, Vito's Tacos, Border Grill and BBQ Mexicana, and Taqueria Katrina ensure a diverse and beloved selection for all attendees.

This impressive culinary expansion follows Allegiant Stadium's strong performance in the 2026 USA TODAY 10 Best Readers' Choice Awards, where it secured second place nationwide for both the AFC's Best NFL Stadium and Best NFL Stadium Food. Chef Schoell emphasized the goal of creating a universally appealing menu, noting that offering a broad range of options, including familiar choices like Taco Bell, is crucial for an inclusive and enjoyable experience.

In a continued effort to enhance visitor convenience, fans will still have access to grab-and-go markets and mobile wallet payment options at stationary concession points. Silver & Black Hospitality is also committed to sustainable practices, working diligently with Allegiant Stadium to minimize food waste and optimize energy efficiency across all food and beverage operations. As Chef Schoell aptly summarized, the aim is to "keep it fun and just continue to elevate our guest experience and be the best that we can," embodying a shared "commitment to excellence, whether it's on the field or in the kitchen."

This significant upgrade to Allegiant Stadium's food and beverage program sets a new benchmark for stadium dining, transforming a typical game-day meal into a memorable gastronomic adventure. It highlights a keen understanding of diverse fan preferences, from comforting classics to luxurious indulgences, ensuring that every visit to the stadium is not just about the game, but also an exceptional culinary journey. This initiative reinforces the idea that the overall event experience is just as important as the sport itself, pushing the boundaries of what fans can expect from a modern sports venue.
